What Pan Do You Use to Make Mini Cheesecakes?

The mini cheesecakes only take a few ingredients to make but they are absolutely delicious. Kids and adults are going to love them! I have a mini cheesecake pan that I use to make mine. Guys this thing is awesome! It is a lot like a muffin tin but the bottoms of each cup lift up and out making it easy to remove the cheesecakes from the pan, and leaving you with perfectly smooth sides. I also used it to make my Mini Witch Cheesecakes! If you don’t have a mini cheesecake pan you could use a muffin tin. These cheesecakes will be slightly larger so you will not get as many mini cheesecakes out of the recipe. Just make sure you grease the sides so the cheesecake will come out easily once it has cooled.

How To Make Mini Cheesecakes:
  1. Place the crust mixture in the bottom of each tin and press it down firmly so it is nice and solid.
  2. The batter is a simple cheesecake batter made with cream cheese, eggs, sugar, and just a little flour. To give them that deep green Frankenstein green color I added about 20 drops of green food coloring.
  3. Pour the batter into each cup filling it just below the top of each.
  4. Bake at 350 degrees F for about 15 minutes.
  5. Remove the pan from the oven and let the cheesecakes cool completely before decorating.


Tips for Decorating Your Frankenstein Mini Cheesecakes:

You can have fun with these cute little cheesecakes and decorate them any way you like. We tried several different options:

Hair:
  • You can use chocolate sprinkles for the hair. Just melt a little chocolate, dip the top of the cheesecake into the chocolate and then into a bowl of chocolate sprinkles.
  • You can use a chocolate peanut butter cup for the hair. Place a peanut butter cup on top of the cheesecake for a delicious hair do!
  • You can dip the cheesecake in crumbled chocolate cookies as hair using the same method as you do for the chocolate sprinkles.
Face:
  • Eyes are a must! Everything is cuter with eyes. We used edible eyes from our local craft store and attached them with melted chocolate.
  • Frankenstein must have bolts coming out of his neck. You can use mini peanut butter cups, chocolate chips, or any other chocolate candy.
  • To draw on a few stitches and a mouth we melted chocolate chips in the microwave and then piped the mouth and other details on.

Ingredients
Cheesecake
  • 16 ounces Cream cheese softened
  • 1 cup Sugar
  • 3 Eggs
  • 2 tablespoons Flour
  • 1 1/2 teaspoon Vanilla
  • 20 drops Green food coloring this may vary
Crust
  • 24 OREO cookies crushed (approximately 2 cups)
  • 2 tablespoons Butter melted
Decorations
  • 32 Edible Eyes
  • 1 cup Chocolate chips melted
  • 1 cup Chocolate Sprinkles
  • 32 Chocolate Chips
Instructions
  1. Preheat oven to 350°F
  2. Melt butter and add crushed cookies.
  3. Form the cookie mixture into 1 inch balls and place them in your mini cheesecake pan.
  4. Use tamper to firmly press the ball in to the bottom of the pan.
  5. In bowl beat cream cheese, sugar, eggs, and vanilla until thoroughly mixed.
  6. Add flour slowly, mixing it in completely.
  7. Add food coloring until you reach the desired color.
  8. Pour cheesecake mixture over crusts, filling each tin almost to the top.
  9. Bake for 15 minutes.
  10. Let cool completely.
To Decorate:
  1. Melt chocolate chips in the microwave.
  2. Remove the cheesecakes from their container and dip the top of each one into the melted chocolate and then into a bowl of the sprinkles.
  3. Pipe the melted chocolate onto the cheesecakes to create a mouth and other decorations.
  4. Pipe a small dot of melted chocolate on the back of each edible eye on on the end of each chocolate chip to "glue" on the eyes and neck bolts.
Recipe Notes
If you use a muffin tin rather than a mini cheesecake pan the recipe will make fewer cheesecakes.
