BAKED HAWAIIAN CHICKEN THIGHS

ingredients

  • 8 chicken thighs
  • MARINADE
  • 2 cups pineapple juice , 500mls
  • 1 tbsp tomato ketchup
  • 1/2 cup gluten free soy sauce , 125mls
  • 4 tbsp dark brown sugar
  • 2 tsp sriracha sauce
  • 1 tsp garlic powder
  • slices Pineapple to serve

instructions

  1. Heat your oven to 350f
  2. Add the marinade ingredients to a small pan and bring to just below boiling point, now simmer and reduce the marinade until it is reduced by at least a third and it should look a bit thicker, about 10 - 15 minutes
  3. In a large oven proof dish or pan (I used a dutch oven) put the chicken thighs skin side down and pour over the marinade.
  4. Put it in the oven uncovered and set the timer for 25 minutes.
  5. When the 25 minutes is up turn the chicken pieces over and spoon more marinade over each one.
  6. Cook for a further 20 - 25 minutes or until the chicken pieces are fully cooked.
  7. The skin from the chicken will render out a lot of fat, you will need to skim this from the top of the cooked marinade before you serve it.
  8. I like to serve it over white rice with the pineapple slices on top, and with a green vegetable such as green beans.
